Tomahawk Pork Chop with Harissa

Tomahawk pork chop marinated in harissa with potato puree, zucchini from the Black Butte garden, stuffed squash blossom, and a preserved lemon gremolata.

I began breaking down a pig the other day and decided to leave the whole rib bone on the loin and serve them as “Tomahawk” pork chops, essentially it is a beautiful piece of pork loin with a huge bone sticking out of it.  The joys of being able to disassemble a pig on my own!  I also needed to harvest the squash at Black Butte before the frost killed everything, it happened so early this year!
