Oven Dried Tomatoes

I absolutely love the flavor of a slow cooked tomato; add herbs and spices and you have a great condiment that can be the base of a soup or a garnish on a plate.

Oven Dried Tomatoes

20 ea Roma Tomatoes

1T Garlic

3T Thyme

3T Rosemary

1/4C Olive Oil


  • Quarter the Roma tomatoes and toss them with the remaining ingredients.
  • Roast on a roasting rack in a 250°F oven.
  • These will take close to 3 hours depending if there is a fan and the fan speed. With no fan, they can take close to 5 hours.
