Also known as burdock root, oyster plant, or goatsbeard, salsify is in the same family as the sunflower.  The root has a similar taste to oysters but sweeter.  The root needs to be peeled and stored in acidulated water to prevent discoloration.  I recommend wearing gloves for this process as the sap gets very sticky and is hard to wash off.  As with most white vegetables, it is best too cook them in water with a little bit of lemon juice and a slurry of flour and water added directly to the boiling water.  My favorite preparation is to poach it in cream and vanilla bean with a little salt.
